This morning I woke up CRAVING pancakes.  I awoke with a growling stomach and pancakes immediately entered my mind.  I usually ALWAYS have eggs and veggies for breakfast (which if you follow us on instagram you probably are well aware).  I suppose this is my body’s way of saying, “Kristen, PLEASE eat something else.”.

I made the coffee and opened the pantry to realize I didn’t have all of the ingredients (nut butter) needed to make the Paleo version of a pancake.  So I decided to try  my own version of French Toast [minus the bread].  It is an extremely delicious breakfast so I really DO hope you try it.  It’s actually easier than making an omelet and it’s certainly easier than making REAL French Toast.

You are probably wondering how you can make french toast without the toast.  So here is the recipe.  Trust me, it tastes just as good if not BETTER than “Real” French Toast.  🙂

P.S. This also makes for a really good dessert!

Kristen’s Paleo French Toast Pancakes

Kristen’s Paleo Friendly French Toast

Ingredients for 4 (you can just double if needing to make extra or reduce by half if only serving 2):

• 1 Tbsp Coconut Oil
• 8 large, organic eggs
• 2 Tbsp Water
• 1 tsp. vanilla extract
• 1.5 tsp. cinnamon
• dash of nutmeg
• pure maple syrup

Directions:

In a bowl, beat the eggs and add in the water until the mixture is frothy.  Add in the vanilla, cinnamon and nutmeg.

Heat a small frying pan on medium high.  Add coconut oil and swirl around the pan until evenly coated in oil.

Pour enough of the egg mixture to fill the pan and let cook until ready to flip.  Flip and cook until lightly browned.

Remove and place on plate and repeat until all french toast pancakes are done.

Drizzle on a small amount of syrup.

Eat.
