Quinoa, Goldenberry, Avocado and Cashew Salad

Palm Beach Athletic Wear is all about looking your best and keeping healthy through a balanced diet and exercise. While having fun and wandering around working on some new pins for Pinterest, Zoe, our resident Fitness Stylist, came upon this really interesting recipe that sounds amazingly tasty and perfect for our Annual Palm Beach Athletic Wear Staff BBQ.

If you haven’t tried quinoa yet, you are missing out on a really hearty, yet healthy food. We’ll have to head to the local health food store for some organic goldenberries but, all the other ingredients are already in our small office kitchen!

Yoga Earth’s Summer Super Food Salad #1: Quinoa, Avocado & Superfoods

According to Yoga Earth, (This Superfood Salad) “… makes an awesome alternative to the classic pasta salad at BBQ’s. It can be prepared up to 24 hours ahead of time too!

Toss in some of YogaEarth’s sweet-tart organic goldenberries for an amazing pop of citrusy flavor. Goldenberries also add a notable amount source of protein, Vitamins C and A and Iron. Creamy ripe avocados balance the flavors of the tart berries and crunchy quinoa and add a full serving of heart-healthy fats to the mix. Top with organic raw cashews for a nice finishing crunch”!


½ cup organic goldenberries
4 cups cooked quinoa (red quinoa is very pretty in this dish)
2 large avocados
½ cup raw cashews
¼ cup fresh parsley, chopped
4 scallions, green and white part thinly sliced
1 large lemon (juice and zest)
1 Tbsp olive oil
½ tsp ground cumin
½ tsp paprika
½ – 1 tsp salt


Submerge the goldenberries in warm water for 10 minutes to soften slightly. Meanwhile place the quinoa, avocados, cashews, parsley and green onions in a large salad bowl. Drain the water from the goldenberries and add to the quinoa mixture. In a separate bowl combine the lemon juice and zest, olive oil, cumin, paprika and salt. Pour over the quinoa mixture and toss to combine. Season to taste with additional salt and pepper if desired. Enjoy!
